ZUCCHINI PIZZA 
4 c. shredded zucchini
1 c. chopped onion
2 tbsp. butter
2 tsp. snipped parsley
1/2 tsp. pepper
1/4 tsp. garlic powder
1/4 tsp. dried oregano
1 (6 - 6 1/2 oz.) pkg. pizza crust mix or make your own
Non-stick spray coating
2 beaten eggs
8 oz. (2 c.) shredded Mozzarella cheese
4 oz. sliced pepperoni or sausage, cooked & drained

In large skillet, cook zucchini and onion in hot butter until tender. Add parsley, pepper, garlic powder, oregano; cook 5 minutes. Stir frequently until most of liquid is evaporated. Remove from heat. Cool slightly. Prepare pizza crust. Spray pizza pan with non-stick spray coating. Press dough into pan and up the edges. Bake at 375 degrees for 10 minutes.

Combine eggs, Mozzarella cheese, and sausage; stir into zucchini mixture. Spread on top of partially baked crust. If using pepperoni, place on top. Bake, uncovered 20 to 25 minutes, or until golden.
