SQUASH OR EGGPLANT PARMESAN 
2 squash or eggplant, sliced
2 eggs, beaten
Bread crumbs
Spaghetti sauce
Mozzarella cheese

Dip squash in egg, then in bread crumbs. Brown on both sides. Put one half of the squash into baking dish, cover with a layer of cheese, then another layer of squash. Top with spaghetti sauce and bread crumbs. Bake for 25 minutes at 375 degrees. Serves 6.
