PINEAPPLE-ZUCCHINI BREAD | |
3 eggs 2 c. sugar 1 tsp. vanilla 1 c. oil 1/2 c. raisins 2 c. grated zucchini, drained 3 c. flour 1 tsp. baking powder 1 tsp. salt 1 tsp. baking soda 1 c. crushed pineapple, drained 1 c. nuts, chopped or 1 c. shredded coconut (opt.) Beat until fluffy, eggs, sugar, vanilla and oil. Add zucchini then add the combined dry ingredients. Stir in pineapple, raisins and nuts. Mix well. Bake in 2 (9"x5"x3") loaf pans that have been greased and floured at 325 degrees for 60 minutes. |
