BLACK WALNUT CARROT CAKE | |
3 c. sifted flour 2 c. sugar 1 1/2 c. salad oil 2 tsp. baking soda 2 tsp. cinnamon 1/2 tsp. salt 3 c. grated carrots 4 eggs 1/2 c. black walnuts FROSTING: 1 c. sugar 1 c. sour cream 3 egg yolks, beaten 1/2 c. black walnuts Preheat oven to 350 degrees. Grease and flour 3 (8" or 9") cake pans. Mix ingredients except carrots, then add last. Bake 40 minutes. FROSTING: Add sour cream and sugar. Heat slightly, add beaten egg yolks and cook to custard consistency. Does better in a skillet. Add nuts and spread on cake. |
