CHILI SAUCE 
2 1/2 qt. chopped red tomatoes
4 lg. onions, diced
3 (or more) hot peppers, diced
2-3 green peppers, diced
3 1/2 c. sugar
2 tbsp. salt
1/2 tsp. nutmeg
1/2 tsp. cinnamon
1/2 tsp. ground allspice
1/2 tsp. black pepper

Cook all this in 4 quart heavy aluminum pan over moderate heat or hot enough to keep boiling when covered with lid. Stir occasionally. When cooked tender, remove lid and keep boiling moderately until it begins to thicken slightly. It takes about 2-2 1/2 hours to cook. Do not overcook and do not cook too fast.
