ELMI'S EASY TURKEY QUICHE 
2 1/2-3 c. leftover stuffing or 1 (6 oz.) pkg. chicken flavored stuffing mix
1 c. chopped cooked turkey
1 c. shredded Swiss cheese
4 beaten eggs
1 can (5 1/3 oz.) evaporated milk

If using stuffing mix, prepare according to package directions. Press leftover or prepared stuffing into a 9 inch pie pan or a quiche pan as a crust. Bake crust at 400 degrees for 10 minutes.

Combine meat and cheese. Beat together eggs and milk and 1/8 teaspoon pepper. Sprinkle the meat-cheese mixture into the hot crust. Pour egg and milk on top. Bake for 30-35 minutes at 350 degrees or until center is set. Let stand 10 minutes before serving.
