BAKED RHUBARB 
4 c. diced rhubarb
1 1/4 c. sugar
1/4 tsp. ground cinnamon
1/2 tsp. ground mace
1 orange

Dice the rhubarb, but do not peel. Place with the sugar & spices and the juice, pulp, and grated rind of the orange in a casserole dish. Cover and bake in a moderate oven (350°F) about 45 minutes, or until tender. If desired, the cover may be removed during the last 15 minutes of cooking.

Serves 6.
