FRESH FRUIT PIE 
1/2 c. sugar
3 tbsp. cornstarch
1 1/2 c. orange juice
1/4 c. lemon juice
1 tsp. grated lemon rind
6 c. assorted cut-up fresh fruit (drain, if necessary)
1 baked pie crust

Fresh fruit - I use 1 cup of each of any of the following: watermelon, strawberries, kiwi, cantaloupe, red or green seedless grapes, bananas, peaches, nectarines, plums, honeydew.

In saucepan mix sugar and cornstarch. Gradually stir in orange juice until smooth. Stirring constantly, bring to boil over medium heat and boil 1 minute. Remove from heat and stir in lemon juice and lemon rind. Cool completely. Fold in assorted fresh fruit. Turn into a baked pie crust and refrigerate for 4 hours.
