HAM LOAF | |
2 lbs. lean, ground pork 1 lb. smoked, ground ham 2 eggs 1 c. bread or cracker crumbs 1 can tomato soup 1/2 c. chopped onion 1/2 tsp. pepper MUSTARD SAUCE: 1 c. fruit juice, such as apple or pineapple 2 tbsp. cornstarch 1 tbsp. lemon juice 1 tbsp. mustard (Dijon is good) Mix first 7 ingredients and form into loaf. Bake at 325 degrees for 1 hour and 15 minutes. Cook sauce ingredients over low heat until thickened, stirring constantly. Serve over ham loaf. |
