ZUCCHINI SQUASH CASSEROLE 
2 lb. squash
1 sm. onion, finely chopped
1 pkg. chicken Stove Top dressing
1 can cream of chicken soup
1/2 tsp. pepper
1 sm. jar pimiento (optional)
1 grated carrot
1/2 c. melted butter
1 (8 oz.) carton sour cream
1 tsp. salt
1 c. grated cheese

Cube squash and cook in microwave. Drain, add soup, sour cream, carrots, pimiento, onion, 1/2 package dressing mix, melted butter, salt and pepper. Mix well. Put in greased 9"x12" dish and top with remaining dressing mix. Add grated cheese on top. Bake at 350 degrees, uncovered for 1 hour.

Serves 8 to 10.

Since microwave ovens vary in power, you may need to adjust your cooking time.
