ZUCCHINI - SQUASH CASSEROLE 
4 med. zucchini
3-4 yellow squash
3/4 c. shredded carrots
1/2 c. chopped onion
6 tbsp. butter
1 box cheese herb croutons
1 can cream of chicken soup
8 oz. sour cream

Steam squash, saute carrots and onions in butter. Stir in soup and sour cream. Fold in croutons and cooked squash. Place in casserole dish. Bake at 350 degrees for 30-40 minutes.
