BAJAN MACARONI PIE 
1 lb macaroni
1 green sweet pepper, chopped
2 tbsp paprika
1 tsp black pepper
2 tbsp mayonnaise
1 onion, chopped
2 tbsp French's Mustard
fresh parsley, chopped
2 tbsp Bajan seasoning (see below)
16 oz grated Cheddar cheese

Bajan Seasoning:

A good Bajan seasoning, if not available locally, can be made with the following ingredients:

black pepper
garlic
onion
clove
thyme
green onions
parsley
hot pepper
paprika

Chop and finely mash ingredients letting all the juices mix together. Use a fork to mash the seasoning. You've got a good Bajan seasoning!

Preparing the Pie:

Cook and drain macaroni (do not overcook). Transfer to a large bowl, and add in remaining ingredients (including 3/4 cheese). Mix everything together with a spoon. Place macaroni into a pyrex dish using the 1/4 grated cheese on top as a crust.

Place in oven at 350°F degrees. Pie is finished when the top cheese starts to look slightly brown. Now, this is tasty macaroni pie, enjoy!!

Note: No need to add eggs unless you want a stiff pie or high cholesterol!

Love macornie pie and this recipe. I'm a lacto ( no eggs but some diary -vegetarian cheese etc). So I substituted the egg filled mayonaise with sour cream, which kept it moist and I used vegetarian anchor cheese. It came out great. I don't like making seasoning for some reason so I used the best tasting Bajan seasoning I could get my hands on, from delish products Barbados.

If you want Anchor cheese and you live in the nyc area; any vegetable stand have it. In Brooklyn several places sell it. Additionally, email the company because they have a distribution center in Florida and will be able to give you some info.

I love the taste of Anchor cheese and cannot get it here so I used seriously sharp cabot cheese from vermont. It is sold in WalMart and is a little pricey $8/2lb block but is pretty close to the cheese used in Barbados. (I'm Bajan and all my friends love macaroni pie) Thanks for the recipe

Trader Joe's have New Zealand cheese that has a similar taste.
