BROCCOLI-BACON SALAD 
1 full head broccoli
1 lb. bacon, fried and crumbled
2 c. grated Cheddar cheese
1 med. to lg. onion (I use Bermuda onion)

Cut broccoli into tiny flowerets. Peel all tender stems and mice. Rub bowl with minced onion and leave in bowl. Add broccoli, bacon and cheese.

DRESSING:

Mix: 1/2 c. sugar 4 tsp. red wine vinegar

Stir dressing. Let stand 1/2 hour. Stir well again. Add dressing 10 minutes before serving.
