“TACO SOUP” IS IN:
NEXT RECIPE:  TATER TOT CASSEROLE

TACO SOUP 
1 lb. ground beef
2 cans whole kernel corn (drained)
2 cans Mexican style tomatoes
2 cans Ranch style beans
1 pkg. Ranch mix (HIDDEN VALLEY®)
1 pkg. taco seasoning

Cook ground beef and drain. Add all ingredients and let simmer for 20 minutes or until it thickens.

This dish can also be prepared like a taco salad.

Tortilla chips topped with taco soup, cheese, lettuce, sour cream and taco sauce or simply eat as a soup with tortilla chips.

I just love this recipe. I use Rotel instead of Mexican style tomatoes for multiple reasons, one because we don't like the chunky tomatoes and two we aren't big onion fans either. I also added in a can of black beans. This added to the amount of food as well as the fiber. You really can't mess this recipe up.

This is an excellent source of fiber, a great filler for lunch. You can vary the different kinds of beans. I do not drain any juices from cans, only grease from meat. I also add 1 can of water. It is always better the next day after refrigeration

Ranch Style Beans are canned in Fort Worth Texas, and are the best canned beans you can buy (IMHO). You can get them with different flavors, with onions, jalapeno peppers, or just the original flavor. Nothing like them!
