EASY LEMON DESSERT 
3 tbsp. lemon juice
4 tbsp. flour
1/4 tsp. salt
1 tbsp. butter
1 c. sugar
1 c. milk
2 eggs

Mix the flour, sugar, and salt. Grate the rind of half a lemon and add it along with lemon juice (optional). Beat the egg yolks, milk, and butter together and add it to the first mixture. Beat the egg whites until stiff and fold them in. Pour into a buttered oven-proof dish. Place in a pan of hot water (so the water comes up the sides 1 1/2 inches). Bake at 325 degrees for about 50 minutes. It's done when you insert a knife around the edges and no liquid is left.
