EGG CUSTARD PIE 
4 slightly beaten eggs
3/4 c. sugar
1/4 tsp. salt
1 tsp. vanilla
2 1/2 c. milk (or Half and Half), scalded
1 (9 inch) unbaked pastry shell

Thoroughly mix eggs, sugar, salt and vanilla. Slowly stir in hot milk; pour into unbaked pastry shell. Hot oven, 475 degrees, first five minutes, then reduce heat to 425 degrees and bake 10 minutes longer. Silver knife inserted should come out clean. Sprinkle with nutmeg.
