TOASTED OATMEAL COOKIES 
3/4 c. butter
1 c. firmly packed brown sugar
1 egg
2 1/2 c. raw rolled oats
1/2 c. sifted flour
1 c. walnuts or pecans
1/2 tsp. baking soda
1/2 tsp. salt
1 tsp. vanilla
1 tsp. cinnamon

1. Preheat oven to 375 degrees. 2. In medium skillet, medium heat, melt butter until lightly browned (don't burn). Saute oats, stirring constantly until golden, about 5 minutes. Remove from heat; cool. 3. Meanwhile, sift flour with cinnamon, salt, baking soda; set aside. 4. In large bowl, combine sugar, egg, vanilla with wooden spoon or electric mixer at medium speed; beat until light and fluffy. 5. Stir in rolled oats and flour mix; combine. 6. Drop teaspoonfuls 3 inches apart on an ungreased sheet. Bake 10-12 minutes.
