MANDELBROT (TOASTED ALMOND
COOKIE)
 
3 c. flour, sifted
1/2 tsp. salt
1 c. sugar
1/2 tsp. almond extract
Chocolate: 3 tsp. cocoa, 1 tsp. sugar, mixed in 1/4 of dough
3 tsp. baking powder
1/2 c. vegetable shortening
3 eggs

Mix and sift flour, baking powder and salt. Beat vegetable shortening until creamy. Gradually beat in sugar. Add eggs one at a time, beating well after each. Stir in dry ingredients and almond extract. Shape into two flat loaves on greased baking sheet. Bake in 350 degrees oven 30 to 35 minutes. Cut into 1/2 inch slices and place on baking sheet cut side up. Place under low heat and toast to golden brown. Turn and toast on other side.
