LIME, PINEAPPLE & CHEESE SALAD 
2 pkgs. lime gelatin
2 (3 oz.) pkgs. cream cheese
1 c. hot pineapple juice
Juice of 1 lemon
Juice of 1 orange
1 c. diced or shredded pineapple, well drained
1/2 c. stuffed olives, finely chopped
1 c. heavy cream, whipped
1/2 c. mayonnaise

Blend lime gelatin and softened cream cheese thoroughly with fork. Add hot pineapple juice to dissolve gelatin. Add lemon, orange juice and water to make 2 cups of liquid. Blend well and chill until nearly firm. Beat slightly and fold in pineapple, olives, whipped cream and mayonnaise. Place in ring mold and chill until firm, 3 to 4 hours or overnight. Arrange lettuce on serving platter. Unmold salad. Place small bowl of fruit salad dressing in center of mold. Serves 10 to 12.
