WHOLE WHEAT BIERROCKS 
DOUGH:

2 c. warm water
2 pkgs. dry yeast
1/4 c. sugar
1 tsp. salt
1 egg
2 - 3 1/2 c. unbleached flour
3 c. whole wheat flour

FILLING:

1 1/2 lbs. ground beef or sausage or 1/2 - 1/2 of each
1/2 c. chopped onions
1-2 garlic cloves
3 c. chopped cabbage
Salt & pepper to taste
Dash of Tabasco hot sauce
1/2 tsp. celery seed
1/4 tsp. sage
Grated cheese (opt.)
Mushrooms (opt.)
Peppers (opt.)
Tomatoes (opt.)

Prepare dough as for roll dough. Allow to rise until double. Meanwhile brown meat, onion and garlic. Add cabbage and seasonings to meat. Cover and cook until cabbage is tender. Do not add any water. Allow to cool slightly. Divide dough into 4 balls. Roll into thin sheets, cut into 5" squares. Place 2 to 3 tablespoons meat and other optional ingredients on each square, fold over and pinch side down on greased cookie sheet. Let rise 15 minutes. Bake at 350 degrees for 20 to 30 minutes. Serves 10 (makes 20 Bierrocks).
