FRUIT UPSIDE DOWN CAKE 
2 tbsp. butter
1/4 c. granulated sugar
Assorted canned fruit, drained
1/4 c. shortening
3/4 c. granulated sugar
2 eggs
1 tsp. vanilla
2 c. biscuit mix
3/4 c. milk

Melt butter in an 8 inch square cake pan. Sprinkle with sugar. Arrange fruit attractively on sugar mixture. On low speed of mixer, blend together shortening, sugar, eggs, vanilla, biscuit mix and milk. Beat on high speed of hand mixer for 4 minutes. Turn into prepared pan.

Bake in preheated oven (350 degrees) 40-45 minutes or until done. Loosen edges and invert on serving plate. Let stand 5 minutes, then remove pan. Serve warm with whipped cream.
