COCONUT CUSTARD PIE 
9-inch unbaked pie crust
3/4 c. sugar
3 eggs
Dash of salt
3/4 c. milk
1 c. coconut

Bake pie crust about 10 minutes in a preheated 350 degree oven. Let it cool. In a large bowl beat sugar and eggs until lemon colored. Add salt, milk and coconut.

Pour mixture into pie crust and bake in a preheated 425 degree oven for 10 minutes, then reduce heat to 375 degrees and bake about 30 minutes or until knife inserted near center comes out clean.
