AUSTRALIAN PIKELETS 
2 c. self-rising flour
1/2 c. sugar (no more)
Pinch salt
2 eggs
1 c. milk

Put dry ingredients into bowl and mix. Add eggs. Gradually add milk. Use wooden spoon to mix, not a beater. Add more milk, if needed, to make mixture fairly thin.

Cook as you do American pancakes: Pour 1/4 cup of mixture onto hot griddle, turn when brown. Should be small and thickish. When cool, add dollop of butter and serve as a dessert.
