BLUEBERRY COBBLER | |
4 c. fresh or canned blueberries, drained 1 tbsp. lemon juice 1/2 c. sugar Dash nutmeg 2-3 tbsp. butter, melted (or butter) 1 c. flour 1 1/2 tsp. baking powder 2 tbsp. sugar 1/2 tsp. salt 1/4 c. shortening 1 egg 1/3 c. evaporated milk 1/8 tsp. cinnamon Preheat oven to 350 degrees. Combine berries, lemon juice, sugar, nutmeg and melted butter. Turn into a greased baking dish. Sift dry ingredients together and work in shortening until like corn meal. Beat egg with evaporated milk and cinnamon. Stir into dry ingredients. Spread batter in thin layer over berries. Bake about 35-40 minutes or until fruit is cooked and top is golden brown. Serve warm, plain or with whipped hard sauce. |
