ROAST PHEASANT 
Oven at 350 degrees. Salt and pepper inside and outside of cleaned bird.

Put into cavity 1 bay leaf, 1 garlic clove, 1 lemon slice. Place 3 or 4 strips of bacon over breast. Cover bird with cheese cloth soaked in melted butter. Baste with butter. Roast 30 minutes per pound (2 pound bird feeds 3 people).
