EASY CHEESECAKE 
Pillsbury graham cracker pie crust

Brush pie crust with a beaten egg yolk and bake for 5 minutes. Chill crust for 30 to 45 minutes.

In blender, mix: 2 well beaten eggs 1/2 c. sugar 1/2 tsp. salt 1 tsp. vanilla

Mix until no lumps appear. Pour into crust and bake 20 minutes in preheated 375 degree oven. Remove from oven and sprinkle with cinnamon and sugar. Let cool to room temperature. Preheat oven to 450 degrees. Mix: 2 tbsp. sugar 1/8 tsp. salt 1/2 tsp. vanilla

Pour mixture over cheesecake and bake at 425 degrees for 5 minutes. Remove from oven and let cool and refrigerate for 6 to 12 hours before serving. Top with favorite fruit before serving.
