SPINACH PIE 
2 lbs. fresh or frozen spinach, chopped
1 onion, finely chopped
4 tbsp. butter
6 oz. cottage cheese
5 or 6 eggs
1 c. finely crumbled feta cheese
Salt & pepper
1/2 pkg. phyllo dough (found usually in freezer section of store)
Melted butter

Saute onions in butter until soft. Add spinach and saute a few minutes longer. Cool. Add cottage cheese, eggs, feta cheese, salt and pepper. Mix well. Place 6 or 7 layers of phyllo in an 11 x 14 x 2 inch pan, brushing each sheet well with melted butter. Add spinach mixture, then place 7 or 8 phyllo on top of filling, again buttering each sheet.

Bake in a moderate 350 degree oven for about 30 minutes or until crust is a golden brown. Cut into small squares before serving hot or room temperature. This can be an appetizer or a vegetable.
