COLCANNON 
6 scallions
2/3 c. milk
4 c. cooked, mashed potatoes
4 c. cooked cabbage, chopped
Salt
Pepper
4 oz. butter

Preheat oven to 350 degrees. Chop the scallions very finely and put them in a small saucepan with the milk. Bring to just below boiling point and set aside.

Mix the potatoes and cabbage in a mixing bowl and season with salt and pepper. Pour in the milk and scallions and mix well. Transfer to a greased pudding bowl or souffle dish and bake for 20 minutes. Make several holes in the top and put a tablespoon of butter in the holes and serve.
