FARM STYLE CORN FRITTERS 
1 egg
1/4 c. milk
1 c. pancake mix
1 (12 oz.) can whole kernel corn, drained
Vegetable oil
Maple syrup

Blend egg and milk. Lightly stir in pancake mix. Fold in corn. Drop by teaspoonfuls into 1/2 inch of oil (350 degrees). Cook until golden brown, about 2 to 3 minutes. Drain on paper towels. Serve with syrup.
