HAM & CORN FRITTERS WITH SAGE 
3 oz. ham, about 1/2 c. diced
1 scallion
4 tbsp. butter
1/2 c. water
Salt & pepper
1/2 c. flour
2 eggs
1/2 c. corn kernels
1/4 tsp. dried sage
Oil for deep frying

Cut ham into small dice. Chop scallion. Cut butter in 4 chunks. Bring butter, water, 1/4 teaspoon salt and 1/2 teaspoon pepper to a boil in a saucepan and boil just until butter melts. Remove from heat and stir in flour all at once. Stir over low heat just until smooth and comes away from sides of pan in a ball. While still hot, transfer to a food processor or mixing bowl and process or beat in eggs one at a time. Stir in ham, scallion, corn and sage. Heat the oil in a large pot or deep fryer to 375 degrees. Drop the dough by heaping tablespoonfuls into hot oil and fry until golden. Drain on paper towels.
