CORN FRITTERS 
3/4 c. flour
1 tsp. baking powder
1/2 tsp. salt
1 tbsp. sugar
1 egg, well beaten
2 tbsp. milk
1 (12 oz.) can whole kernel corn

Omit salt and baking powder if using self-rising flour.

Sift together with baking powder, salt and sugar. Mix egg, milk and corn together. Add flour mixture and beat quickly, but thoroughly. Drop batter by tablespoon into hot oil. Only fry a few at a time until golden brown. Makes approximately dozen fritters.
