PARADISE PUMPKIN PIE 
8 oz. pkg. cream cheese
1/4 c. sugar
1/2 tsp. vanilla
1 egg
1 1/4 c. canned pumpkin
1/2 c. sugar
1 tsp. cinnamon
1/4 tsp. ginger
Dash salt
1 can evaporated milk
2 eggs, slightly beaten
9 or 10-inch uncooked pie shell

Heat oven to 350 degrees. Combine softened cream cheese, sugar, and vanilla, mixing well. Add egg and mix well. Spread on bottom of pie shell. Combine remaining ingredients. Mix well and carefully pour over cream cheese mixture.

Bake in 350 degree oven for 1 hour and 5 minutes, or until done. Cool. Brush with maple syrup and garnish with nuts, if desired. Whipped cream is also a great topping.
