OVEN - FRIED CHICKEN 
2 tbsp. olive or corn oil
1/4 c. minced parsley
2 cloves garlic, minced
1/4 tsp. pepper
1 (2 1/2 to 3 lb.) chicken, cut into serving pieces, washed & dried
1/2 c. dried bread crumbs
3 tbsp. grated Parmesan cheese

In a large bowl combine oil, parsley, garlic and pepper. Add chicken. Toss to thoroughly coat each piece. Cover and refrigerate for at least 1 hour, turning occasionally.

Heat oven to 350 degrees. In a 9 inch pie plate combine bread crumbs and cheese. Remove chicken from marinade; completely coat each piece with bread crumb mixture, shaking off any excess. Arrange in 1 layer in a 13 x 9 x 2 inch baking pan. Bake for 1 hour or until cooked through, turning occasionally.
