ZUCCHINI SNACK SQUARES 
3/4 c. whole wheat flour
1 1/2 tsp. baking powder
1 tsp. salt
2 tbsp. minced onion
1 tbsp. dried parsley
1/2 tsp. leaf oregano, crumbled
Dash of pepper
1/2 c. grated Parmesan cheese
4 eggs
1/2 c. oil
1 clove garlic (crushed)
3 c. zucchini, thinly sliced

Preheat oven 350°F.

Combine flour, baking powder, salt, minced onion, parsley, oregano, pepper and Parmesan cheese in large bowl; mix lightly with fork.

Beat eggs with oil and garlic in small bowl. Pour into flour mixture. Mix lightly with fork until smooth. Fold in zucchini, mix thoroughly to coat. Spread evenly in a 11 3/4 x 7 1/2 x 1 3/4 inch buttered casserole dish.

Bake at 350°F for 40 minutes or until lightly browned on top (will look wet).

Let stand several minutes to cool. Cut into 2-inch squares.
