SHRIMP STEW 
1/2 c. oil
1/4 c. flour
1 med. onion, chopped
1 c. green onion and tops
2 pods garlic, pressed
1 can tomato paste
1 tbsp. sugar
1 tsp. salt
1/2 tsp. black pepper
3 c. water
Juice of 1 lemon
1 bay leaf
Dash of Tabasco sauce
2-3 lbs. raw, cleaned shrimp

Brown flour in oil. Add onions, garlic and tomato paste, stirring until paste browns. Add water slowly, stirring to be sure of smoothness. Add sugar, salt, pepper, bay leaf, Tabasco sauce and lemon juice. Simmer for 1 hour.

Add shrimp and simmer for 20 minutes or until shrimp is cooked. If gravy gets too thick, add more water. Serve over rice.
