SHRIMP CREOLE 
1 c. chopped onion
1/2 c. celery, chopped
1 (12 oz.) can of tomato sauce
2 tbsp. parsley
Dash cayenne pepper
3 c. cooked rice
1 green pepper, chopped
3 tbsp. butter
1/2 c. water
1/2 tsp. salt
1 lb. shrimp

Combine onion, green pepper, celery and butter in 1 1/2 quart casserole. Microwave 3 minutes on high (or until onions are transparent). Stir in tomato sauce, water, parsley, salt and pepper. Cover with waxed paper. Microwave 5 minutes. Add shrimp, stir. Cover with waxed paper and microwave 4 minutes on high. Let stand 7 minutes. Serve over rice.

Since microwave ovens vary in power, you may need to adjust your cooking time.
