FRUITCAKE COOKIES | |
1 c. butter 1 1/2 c. brown sugar 2 eggs, beaten 1 tsp. vanilla 1 tsp. salt 1 tsp. baking soda 1 tsp. cinnamon 2 1/2 c. flour 3 or 4 slices candied pineapple, cut in chunks 1/2 lb. candied cherries, 1/2 red & 1/2 green 2 lbs. dates, cut in lg. pieces 1/2 lb. pecans, cut in half 1/2 lb. Brazil nuts, lg. pieces 1/2 lb. walnuts, lg. pieces Sift together dry ingredients. Cream butter and sugar, add eggs and vanilla, then dry ingredients. Combine all fruits and nuts, and pour batter over them, mixing well. Drop on ungreased cookie sheets, forming them a bit. Bake at 350 degrees for 10 to 12 minutes. Yields: 150 small cookies. |
