FRUITED CHICKEN SALAD 
4 c. diced cooked chicken
1 (15 oz.) can pineapple chunks, drained
1 c. chopped celery
1 (11 oz.) can mandarin orange sections (drained)
1/2 c. sliced pitted ripe olives (optional)
1/2 c. chopped green pepper
2 tbsp. grated onion
1 c. mayonnaise
1 tbsp. prepared mustard
1 (5 oz.) can chow mein noodles
Lettuce leaves (optional)
May add 1/2 cup coarsely chopped walnuts

In a large bowl combine cooked chicken, pineapple, celery, oranges, olives, green pepper, and onion. Blend mayonnaise and mustard. Toss gently with chicken mixture. Cover and chill several hours. Just before serving, mix in chow mein noodles. Turn into a lettuce-lined serving bowl.

Serves 8.
