PUMPKIN OR BANANA NUT BREAD 
3 1/2 c. whole wheat pastry flour
2 tsp. baking soda
1 1/2 tsp. salt
1 1/2 tsp. cinnamon
1 tsp. nutmeg (ginger & allspice if using pumpkin)
2 c. sucanat or sugar
1 c. canola oil
4 eggs
2/3 c. water
2 c. pumpkin or mashed banana
1 c. chopped nuts

Preheat oven to 350 degrees. Sift flour, soda, salt and spices. Add sugar. Make well in center and add oil, eggs, water and pumpkin or banana, all at the same time. Mix well. Add nuts, if using. Pour into 9 x 11 inch ungreased rectangle cake pan. Bake 45 minutes or until toothpick comes out dry.
