BARBER'S PASTRAMI 
10 lb. piece sirloin tip (boneless)
1 c. Mortons Tender Quick Meat Cure Salt
1 c. sugar

Mix together and cover all of meat. Sprinkle generously with Morton's Nature Seasoning, lemon pepper and 1 1/2 cups red wine.

Pour water around meat until about 1/2 covered. Do not wash off seasonings. Turn and marinate once a day for 4 days. Smoke until juice barely runs when forked. GOOD---
