POTATOES AU GRATIN 
1/4 c. butter, melted
1/4 c. sifted flour
1 tsp. salt
1/8 tsp. pepper
2 c. milk
1 c. freshly grated sharp cheese
2 lb. (4 c.) cooked, diced potatoes, seasoned with salt and pepper
2 tbsp. butter, melted
1/4 c. dry bread crumbs
1 tbsp. parsley

Preheat oven to 375 degrees. Grease 1 1/2 quart casserole. Combine 1/4 cup butter, flour and seasonings in sauce pan; cook over low heat stirring constantly; add cheese and milk. Cook about 5 minutes until sauce thickens. Combine sauce and potatoes; place in prepared casserole. Mix 2 tablespoons melted butter, bread crumbs and parsley. Sprinkle on top of casserole. Bake 20 to 30 minutes or until browned and thoroughly hot. Yummy with ham dinner! Serves 6 to 8; easily doubled.
