SAUSAGE CHEESE BALLS 
1 lb. hot or sweet Italian sausage
1 lb. sharp cheddar cheese, shredded
3 c. biscuit baking mix
3/4 c. water

Remove sausage from casing. Cook in large skillet. Break up meat with a fork until no longer pink (8-10 minutes). Drain off fat. Spoon sausage into a large bowl and cool completely. Add cheese, biscuit mix with fork until blended.

Roll into 1-inch balls. Place on a large cookie sheet about 2 inches apart. Bake in 375-400 degree oven for 12-15 minutes or until puffed and browned. Remove from cookie sheet; cool completely on wire racks. Makes 6-7 dozen.
