SAUERKRAUT SALAD WITH CARROTS
AND APPLES
 
1/4 c. salad or olive oil
1 1/2 tsp. sugar
1 tsp. caraway seed
1/2 tsp. salt
1 tsp. vinegar
1 lbs. sauerkraut, drained
2 med. tart apples, peeled, cored and diced
3/4 c. grated carrot

Combine oil, sugar, caraway seeds, salt and vinegar. Rinse and drain sauerkraut well, chop. Stir into oil mixture. Add apples and carrots; toss to mix well. Yields: about 6 servings.
