PORK, SAUERKRAUT AND APPLES | |
1 lb. fat-trimmed boneless pork cubes, cut from leg 1 c. sliced onion 1/2 c. gin 3 c. rinsed and drained sauerkraut 2 unpared Golden Delicious apples, shredded 2 tsp. caraway seeds Spray a non-stick pot with cooking spray. Add pork cubes and brown over medium heat. Turn to brown evenly. Stir in onion. Cook 1 minute, then stir in gin. Add drained sauerkraut, shredded apples and caraway seeds. Cover and simmer until pork is tender, about 50 minutes. |
