GIANT BURGER 
1 large tomato, cut in wedges
1 med. green pepper, cut in strips
1/4 c. sliced scallions
1 1/2 c. grated Swiss cheese
1 2/3 c. finely rolled cracker crumbs
2 lb. ground beef
2 eggs
2 tbsp. mustard
1 tbsp. Worcestershire sauce

Reserve a few pieces of tomato, peppers and scallions for garnish. Dice remaining tomato and pepper. In medium bowl, combine tomato, green peppers, scallions, cheese and 2/3 cup cracker crumbs; set aside. In large bowl, blend together 1 cup crumbs, beef, eggs, mustard and Worcestershire sauce. On large, shallow baking pan, press half beef mixture into 10 inch circle. Top with vegetable, cheese mixture, spooning evenly to within 1 inch of edge. On sheet of waxed paper, press remaining beef mixture into a 10 inch circle. Place on top of cheese mixture, remove wax paper. Press edges of burger together to seal. Bake in preheated oven at 350 degrees for 30 to 35 minutes. To serve, garnish with vegetables, cut into wedges. Serves 8.
