SHELIA'S FAVORITE PANCAKES 
1 c. all-purpose flour
2 tsp. baking powder
1/2 tsp. salt
2 tbsp. sugar
1 large egg, lightly beaten
1 c. milk
1 tbsp. unsalted butter, melted

Preheat griddle to 350°F. Whisk all dry ingredients together before whisking in liquids. Whisk in egg, milk and melted butter. Batter should be lumpy. Do not beat until smooth. Use 1/2 cup measuring cup to pour batter onto griddle. Turn once when pancake surface appears bubbly.

Your favorite fresh fruit can easily be added to batter once on the griddle.

Makes 8 to 10 pancakes.
