CRANBERRY - NUT BREAD 
1 c. whole-wheat flour
1 c. white flour
1/4 c. sugar
1 tbsp. baking powder
2 tsp. grated orange rind
1 c. orange juice
2 tbsp. vegetable oil
1 egg
1 c. chopped fresh or frozen cranberries
1/3 c. raisins
1/3 c. chopped walnuts

Combine the flours, sugar, baking powder and orange rind in a mixing bowl. Add the remaining ingredients and stir until well blended. Pour into an oiled 9 x 5-inch loaf pan.

Bake in a 350°F oven for 45 to 50 minutes. Cool for 5 to 7 minutes before removing from pan. Turn onto a wire rack and cool thoroughly. Store in a plastic bag or aluminum foil for at least 1 day before slicing.

Serves 15.
