SOPAPILLAS 
1 3/4 c. flour
2 tsp. baking powder
1 tsp. salt
2 tbsp. shortening
2/3 c. cold water

Mix together and knead lightly. Cover, let rest 5 minutes. Roll real flat (1/8 inch thick); cut into squares (2 inches by 3 inches). Fry a few pieces at a time in 385 degree oil, turning at once so they will puff. Brown on both sides. Serve with butter and honey or cinnamon and sugar.
