1 3/4 c. flour 2 tsp. baking powder 1 tsp. salt 1 tbsp. sugar 2 tbsp. shortening 2/3 c. milk 2 c. hot vegetable oil Honey Cinnamon-sugar (2 tsp. cinnamon blended with 1/2 c. sugar) Combine flour, baking powder, salt and sugar in large mixing bowl. Cut shortening in with pastry blender or fork until mixture resembles cornmeal. Add milk, mixing just until dough holds together in a ball. Turn out onto lightly floured surface and knead gently about 1 minute until smooth. Cover dough and let rest 1 hour. Roll into 12"x15" rectangle with floured rolling pin. Dough should be 1/16 to 1/8 inch thick. Cut into 3" squares or 2"x3" oblongs. Heat oil in a saucepan to 370 to 380 degrees. Drop a few pieces of dough at a time in oil, turning at once so they will puff evenly. Turn back over and brown both sides. Drain on paper towels. Serve hot with honey and cinnamon-sugar. Suggestions: I found that the trick of making them is to cut them with a table knife. The knife cut makes a seal. If I just used my fingers to mash some of the leftover dough together those pieces didn't puff up. Serves 6. |
