HOT CHICKEN (OR TURKEY) SALAD 
1 c. mayonnaise (not salad dressing)
1 tsp. grated lemon peel
2 tsp. fresh lemon juice
2 tsp. finely minced onion
1/2 tsp. salt
2 1/2 c. diced, cooked chicken or turkey
1 c. chopped celery
1 c. toasted almond slivers
1/2 c. grated sharp cheddar cheese
1 c. crushed potato chips

Blend mayonnaise with lemon peel and juice, onions and salt. Mix with chicken, celery and almonds. Spoon into 1 quart casserole. Top with cheese, then potato chips. Bake at 400 degrees for 15 minutes. Serves 7 to 8.
